Turkey Meatloaf

Ingredients - Serves 4

1 tblsp sunflower oil
1 red onion, peeled & chopped
450g turkey mince
4 cumberland sausages
1 tsp worcestershire sauce
40g fresh breadcrumbs
1 tsp dried mixed herbs
salt & pepper
1 tsp dried mixed herbs

Preheat the oven to 200°C or Gas Mark 6. Line a loaf tin with foil
Heat the oil in a frying pan and cook the onion until soft.
Make a cut along each sausage and peel off the skin.
Place the sausage meat into a bowl and add the mince, cooked onion, worcestershire sauce, breadcrumbs and herbs.
Season and mix together. Spoon into the loaf tin and smooth the top so it is level.
Bake for 40-45 minutes.
