Quiche Lorraine


Ingredients

shortcrust pastry homemade or shop bought
100g bacon
75g cheddar or gruyère cheese
2 eggs
salt & pepper
150ml milk


Preheat the oven to 190°C or Gas Mark 5. Roll out the pastry onto a floured surface.

Line a 17cm shallow ovenproof dish or flan ring with the rolled out pastry and trim the edges.

Cut the bacon into 1cm pieces and lightly fry in a little butter or oil.

Place layers of thinly sliced cheese over the pastry and add the bacon.

Beat the eggs and the milk, season and pour over the bacon.

Bake in the centre of the oven for 40-45 minutes until set.
