Coronation Chicken

Ingredients

1 chopped chicken breast
1 medium onion, chopped
3 rashers of bacon, chopped
mayonnaise
1 tablespoon olive oil
2 teaspoons curry powder
chilli powder (optional)

Heat oil in frying pan over moderate heat.
Add onions, chicken and bacon.
Saute until onions are translucent and chicken is well cooked.
Drain and put into a large bowl in the fridge.
When it is cold add a couple of tablespoons of mayonnaise the curry powder and a teaspoon of chilli powder, if using.
Mix well and eat.
