450g chicken, cubed
2 tblsp curry powder (eg. Balti Spice Blend)
1 onion, sliced
400g tin chopped tomatoes
275ml water
cornflour
Fry the onion in a little oil or butter until soft. Add the chicken and curry powder and fry for 5 minutes until the chicken is cooked.
Add the tomatoes and water and mix well. Bring to the boil and simmer for 30 minutes.
Check after 20 minutes, if the sauce is still runny sift a tablespoon of cornflour over and mix well. Check again after 5 minutes and add another tablespoon of cornflour if still too thin. Continue to simmer until it is the consistancy you require.
Serve with rice and naan bread.
