100g soft butter
100g castor sugar
100g self raising flour
2 eggs, beaten
30ml milk
a few drops vanilla essence
3 tblsp golden syrup
grated rind of 1 lemon
custard, cream or ice cream to serve
Cream the butter and sugar together, gradually add the egg and vanilla essence.
Stir in the flour, lemon rind and milk.
Place the golden syrup at the bottom of a 2 pint microwavable pudding basin, and spoon the mixture over the top. Cover with a plate.
Microwave for 3½-4 minutes, insert a cocktail stick into the middle of the pudding, if it comes out clean it is ready.
Leave to stand for 5 minutes before serving with custard, cream or ice cream.
