Rock Cakes

This recipe has been recommended by Sarah Stanbridge from Sompting in West Sussex.

Ingredients

8oz self raising flour
4 oz margerine or soft butter
4oz caster sugar
4oz of dried fruit of your choice ie currants, raisins etc.
1 egg, beated
a little milk

Grease a medium sized baking tray and pre heat the oven to 200c.

Sieve flour and rub in margerine or butter until the mixture looks like breadcrumbs.

Add the sugar and fruit and stir in the beaten egg and enough milk so the mixture is a sticky consistency.

Take a spoonful of the mixure and drop it in little heaps onto the baking tray, allow room for the mixture to spread during the cooking.

Makes about 15 large or 30 small cakes.

Place in oven for about 10-15 mins or until crisp and golden brown.

When cooked carefully lift onto a wire cooling tray and allow to cool.

Alternative you can use chocolate drops or nuts instead of fruit it you fancy a change.
