Peanut Cookies

Ingredients

1 ¼ cups plain flour
½ cup peanut butter
½ tsp baking powder
½ cup butter
½ cup granulated sugar
½ cup brown sugar
1 egg
¾ tsp bicarbonate of soda

Mix the butter, peanut butter, egg, white & brown sugar together in a large bowl.

Add the other ingredients and mix to form a dough. Place in the fridge for at least an hour. (Can be left for up to a week).

Pre-heat the oven to 190°C, gas mark 5.

Roll out the dough to ½cm thick on a lightly floured surface. Cut into small circles, place on a baking sheet and bake for 6-8 minutes.
