Ingredients
100g/4oz soft butter
150g/6oz soft brown sugar (or demerara to make them crunchier)
150g/6 oz self raising flour
1 egg
100g/4oz crunchy peanut butter ( try sun pat extra crunchy.. mmmm )(you can use smooth if you'd rather but no nutty bits then)
Cream the butter and sugar with a wooden spoon in a large bowl until soft and fluffy.
Add the other ingredients and mix until smooth.
Pre-heat the oven to 180°C, gas mark 4.
Place spoonfuls of this thick paste onto a buttered baking sheet.
Leave space for them to spread and pat them down a little.
Bake for 15-25 minutes - this depends on whether you'd like them them squidgy-centred, or very crisp and crunchy
Alternative - Add chunks of dairy milk chocolate to the mixture to make Chocolate Peanut Butter Cookies
