Chocolate Frosting

Ingredients

60g Plain Chocolate
185g Castor Sugar
1 Egg White
A Pinch of Cream of Tartar

Melt the chocolate in a bowl over hot water.
Into a large heatproof bowl, mix the sugar, egg white and cream of tartar.
Place the bowl over a saucepan of gently simmering water.
Using a whisk, beat the mixture together for 6 - 8 minutes until soft peaks form.
Remove the mixture from the heat and gently whisk tghe melted chocolate into the mixture.
Use immediately to smooth over the top and sides of a large cake or onto the top of cupcakes.
