| Into a large heatproof bowl, mix the sugar, egg white and cream of tartar. |
| Place the bowl over a saucepan of gently simmering water. |
| Using a whisk, beat the mixture together for 6 - 8 minutes until soft peaks form. |
| Remove the mixture from the heat and gently whisk tghe melted chocolate into the mixture. |
| Use immediately to smooth over the top and sides of a large cake or onto the top of cupcakes. |
