225g self raising flour
1 tsp baking powder
3 bananas (soft)
150g castor sugar
50g butter
1 egg
2 tsp milk
Preheat the oven to 190°C or Gas Mark 5. Grease a 2lb loaf tin.
Place the sugar and butter in a bowl and beat until light and fluffy. Add the egg and mix again.
Mash the bananas and beat into the mixture.
Sift in the flour, baking powder and milk and mix well.
Pour into the loaf tin and bake for 1 hour.
Slice when cool and serve with custard or spread with butter.
